2-Ingredient Peanut Butter Fudge! (Quick & Easy Recipes)

This is probably one of my easiest recipes ever! Seeing as it's only got 2 ingredients, it's so quick to make. One thing I loved before I went vegan was fudge, but it was such an odd kind of dessert, I was never really sure what it was made out of. It's one of those things you only seem to really get around Christmas or if you go to Cornwall, because I don't really see it much any other time.

So I'm going to show you my super quick & easy peanut butter fudge. The thing with this recipe is that it tastes good regardless of what you put into it. You can add many different things into it, like you can add vegan chocolate chips for example, or even different flavourings like mint or caramel. My favourite vegan food flavourings are by Dr Oetker. Their mint, almond & caramel are some of my favourite things to add into my desserts. Any of these are great to add into this recipe, to give your fudge a different taste completely. They're also amazing to add into different cake or icing mixes. Best of all, is that they're the Vegan!

It also depends on what kind of peanut butter you use for this recipe. I am using "100% peanuts" peanut butter, so there's no extra salt or oil. If there is extra oil added, you may need to add more powdered sugar, as there will be more liquid in your peanut butter. You can also use any different kind of nut butter you like, such as almond. If the mix is a little to dry, add a small amount of liquid such as maple syrup, or vanilla extract to make the mixture a little less dry.

Ingredients
  • 1 Cup Peanut Butter
  • 1/2 Cup Powered Sugar
Instructions
1.Add your peanut butter into a bowl, and whisk until you have a very soft mixture. Add in your powdered sugar, and mix until it forms a ball. If it doesn't from a ball, then add a little more powdered sugar. It shouldn't be sticky, and it should be a firm ball to the touch.2.Then get a lined square baking dish, and press your ball of fudge into shape. Then place into your fridge, and let it set overnight. 3.Then once your fudge has set, remove it from the fridge and a cut into bite-size squares.

Vegan Mac & Cheese (Quick & Simple Recipes)

Here is a recipe for vegan mac & cheese, made out of vegetables. I know “cheese” made out of vegetables; it might sound very weird but trust me, it's good. Even the UK is stepping up their vegan game with many pre-made vegan mac & cheese products now, but if you want a really quick, homemade alternative without having to buy vegan cheeses, I’ve got you covered.

Essential
  • 1 large potato
  • 2 carrots
  • ½ cup nutritional yeast
  • 1 cup soy milk
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • 1/4 teaspoon salt (or to taste)

A few people have asked me to convert the recipes into grams & millilitres, but I feel like having it in cups is a lot simpler, and here in the UK, there are so many places you can buy these little useful utensils from such as Home Bargain, as this is where I got mine from, and it makes cooking a lot easier than having to measure out each ingredient, so I suggest picking yourself up a set, because trust me, you'll realise how much easier it is to cook with them.

First peel & chop your potato & carrots, then place them into a pan of water. Boil until softened. Also get your pasta on to cook in a separate pan. Once the potatoes & carrots are soft, drain & add into your blender, along with your soy milk, nutritional yeast, paprika, turmeric & salt. Then, blend & that's it! Yes, really. That’s it. It’s a really fast & simple recipe, and tastes great!

Before I when vegan, I didn’t have a clue what nutritional yeast was, and when I first saw it, I thought it just looked like fish food. I had no clue that it would become such an essential part of my cooking. When I was first looking at recipes & meal ideas before I went vegan, so many of them said it can give your food a “cheesy” flavor, I just thought “How? How can this weird power do that?”... But it does! As you can see, the one that I am using it has added B12, so it's a great way to get that into your diet if you're worried about that! I got mine from Holland & Barrett here in the UK, while you can also get it in many health food stores.

You can add the sauce to anything you feel like, such as nachos, chips or even just as a dip.
