Here is a really fast and simple recipe for vegan pancakes, without the need of any animal ingredients, along without any vegan egg replacement, which I don't really ever use in my baking, because I’ve never had the need for them while making any recipe. These pancakes are great if you feel like a sweet treat to whip up in a really small amount of time! The ingredients for this recipe are things you will likely already have in your home, so these are something you can easily make for a dessert or breakfast. Let's get started!
Essential
- 1 ½ cups of Plain Flour
- 1 tablespoon of Baking Powder
- 1 teaspoon of Bicarbonate Of soda
- 2 tablespoons of Sugar
- 1 cup of Soya Milk or any milk alternative you prefer
Optional ingredients
- Raspberries
- Maple Syrup/Agave Syrup
- Icing Sugar
First of all, place all of your dry ingredients into a mixing bowl (Plan flour, sugar, baking powder, bicarbonate of soda), and give them a mix. At this point, you can also add different flavourings such as cinnamon, nutmeg and any fruit you would like to add into them. You can really make this recipe your own. This is such a simple pancake mix, so you can add all of the different flavourings that you want.
Once you’ve mixed the dry ingredients, add your soya milk/milk alternative you prefer, and mix that until you have a thick batter. Try to remove as many lumps as you possibly can, but if some remain, don’t worry. Get a frying pan on a medium heat & add some spray oil or coconut oil. I use a sunflower spray oil. Use a ladle to spoon out equal sized portions of the batter, but you can also make these pancakes any size that you like. By doing this, you'll end up having a different amount of pancakes, but that depends how big or small you would like to make them.
Once cooking, when bubbles start to form on the top of the pancakes, this is the time to flip them onto the other side, and continue to cook for a further minute. |
Simply just double the recipe if you would like to make more with this mixture, as I made 5 large pancakes by using a regular sized ladle.There are many toppings that you can use. I used maple syrup, raspberries & powdered sugar sprinkled onto the top of the pancakes, but you can use any toppings you like.

ReplyDeleteIs there any natural ingredient to replace the baking powder? Can we do by ourselves with flower, water and sugar as per the bread?
ReplyDeleteSubstitute 1 tablespoon of Baking Powder = 3/4 teaspoon baking soda and 1.5 teaspoons apple cider vinegar or lemon juice. I have not tried this with this recipe as yet but has worked with others.
