Spooky Vegan Cupcakes!

Seeing as it is October, I thought it would be a perfect time to show you all my cupcake recipe, but not just any old cupcakes, spooky cupcakes! So no better time than Halloween!

I found these cute cupcake cases from Morrison's, which I thought will be perfect for this recipe. They also came with a cute little decoration to put on the top of your cupcakes!. I'm also going to show you how to make my delicious vegan buttercream. When I first went vegan, I had no clue how I could make a fluffy icing for cakes because, at first I didn't know vegan butter even existed which now as you can tell by many of my recipes I use it a lot. It just makes turning recipes vegan so much simpler. You could just use the regular ingredients you would have anyway, but just the vegan versions!

For the Butter Cream i used Dr Oetker food colouring. Most of their products are vegan, but always be sure to check the food colouring by them. The one colour I know is not vegan is the red food colouring, which is normally the case when it comes to red food colouring. It is usually very hard to find a vegan red food colouring.

Spooky Vegan Cupcakes!
Ingredients
  • 2 Cups Self-raising Flour
  • 1/2 Cup Oil
  • 1/2 Cup White Sugar
  • 1/3 Cup Light Brown Sugar
  • 1 Teaspoon Apple Cider Vinger
  • 1 Cup Soya Milk
  • 1 Tablespoon Vanilla
  • 1 Teaspoon Baking Power
  • Buttercream.
  • 3 Cups Powered Sugar
  • 1 Cup Vegan Butter
  • 1 Tablespoon Soya Milk
Instructions
1. Add your soy milk into a small bowl, along with one teaspoon of apple cider vinegar & mix. Then set aside as you mix your dry ingredients (Letting your milk and vinegar mixture sit will create "buttermilk")2. In a large bowl, combine your dry ingredients (Flour, Sugar, Brown Sugar, Baking Powder) and mix. Make sure there are no lumps of brown sugar3. Now add your oil, vanilla, vinegar and milk into your dry ingredients and mix until you have a smooth mixture4. Now get a cupcake tray and place your cupcake cases into them. Spoon a tablespoon of batter into each case.5. Then place your cupcakes into the centre of your oven at gas mark 5 (375 Degrees f) (190 Degrees C) for 20 minutes or until they are golden brown.6. Now take your cupcakes out of the oven and let them cool completely before you ice them otherwise your buttercream will melt.Buttercream 1. Add your cup of butter into a bowl and whisk until it's soft and fluffy.2. Now add your three cups of powdered sugar and mix with a spoon before you use your electric mixer, otherwise you'll have a cloud of powdered sugar everywhere.3. Now get your electric whisk and mix the sugar and butter until it's become a slightly crumbly mixture, but it will also form together when you press it.4. So then add a tablespoon of soya milk and whisk. It will now form into a fluffy buttercream5. For my cupcakes I add some food colouring to half the mix. I used Dr Oetker "jet black" food colouring. If you want it to actually go fully black, use the whole container, but I only used a couple of drops to have this light grey/Silver colour, which I think went well with the decorations as it slightly reminds me of the colour of a gravestone or bones.

Winter Warming Apple Crumble (Quick And Simple Recipes!)

Apple crumble is one of those desserts that I bet everyone has had in their life at some point. I feel like when you add all of these spices like cinnamon, nutmeg & clove it really makes this dessert into something for winter/ You could even say it's a "pumpkin spiced" apple crumble even though pumpkin spice is not actually pumpkin. It's just all those kind of "wintery" warming spices that are mixed together, and that's what I'm using in this recipe. It's the mixture of these spices that gives this crumble a warming taste & smell.

I have also decided to create a YouTube channel to go alongside this blog. I feel like it will be a lot easier for people to follow the recipes if a video is linked with it as well, so then you can print and read the written recipe, but also see how it's made. For the amount of apples you will need, it may vary on the kinds of apples you use. I used Granny Smith apples, and they were pretty small, so I used 4 all together, but regardless of what apples you use, they should add up to three cups worth, so if you find large apples you may only need two. Also you can play around with this recipe, and add them into different kinds of dishes other than just your standard oven dish. You can make a smaller version and cook them in ramekins or even tiny pie cases, or even do what I did, and cook it in a large glass oven dish, it's really up to you.

Winter Warming Apple Crumble
Ingredients
  • 3 Cups of Apples (I used 4 small apples, chopped) 
  • 1/2 Cup Vegan Butter
  • 1/3 Cup Sugar
  • 1 and 1/2 Cups Flour
  • 1 Teaspoon Nutmeg
  • 1 Teaspoon Ground Ginger
  • 1/4 Teaspoon Ground Clove
  • 1 Tablespoon Cinnamon 
  • Juice Of Half a Lemon
  • 2 Tablespoons Brown Sugar
Instructions
1. Peel & cut your apples into thin wadge shapes 2. Add them into a bowl along with your brown sugar, cinnamon, nutmeg, ginger and clove then mix until its fully combined & each of the apple slices are coated. 3.Add your lemon juice into the apples and mix.4. Pour you apple mixture into a oven dish & set aside to make the crumble topping. 5. Add your flour, butter & sugar into a bowl & mix with your finger tips, or a pastry cutter until all your ingredients are combined into a crumble. 6. Grab your apple mix & sprinkle the crumble mixture on top & fully cover the apples.7. Place your crumble into the centre of your over for 30 minters or until the crumble is golden & the apples have stared to bubble. 8. When the time is up, take your crumble out the over & let it sit for 10 to 15 minter, so the apples can stop bubbling & let the sugar set into a syrup, so when you take it out of the dish it will stay together better.

Easy Vegan Scones!

So, vegan scones. I loved scones before I went vegan, but obviously, there's butter, milk & everything else in them, so they definitely are not vegan, and again I have never ever seen any vegan scones in the shops, so I thought I'd try & make my own and I'm pretty proud of this recipe.


Ingredients

  • 2 ½ cups plain flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup vegan butter (cold)
  • ⅓ cup sugar
  • ½ cup soy milk

(Also I have noticed that in the US not all sugar is vegan so if you're from the US you may need to make sure that you find a brand of sugar that is vegan but here in the UK all sugar is vegan.)

Add all your dry ingredients into a bowl & mix until combined, then add your butter & mix with a fork or your finger tips until you have a crumbly mix. Then start adding your milk a little bit at a time, mixing each time until your mixture starts to form into a ball of dough. (If your dough is a little sticky, add more flour.)

When you are adding the milk into the crumbly mixture make sure that you don't completely rub in the butter in you want there to be patches of butter through out your dough so when its cooking it will have a crumbly and light texture. When your dough is all combined onto a ball you'll notice that its a very light & soft dough, and this is what you want to have perfect scones. If you notice that the dough is pretty sticky after you've added the milk, just add more flour onto your hands, surface you are going to roll it out on and your cookie cutter. With this dough, you don't want to add too much extra flour or the dough will become too stiff and it won't rise up in the oven and become more of a crust dough then a light dough.

Now that you have your dough rolled out to about one inch thick. Cut out your scones with a cookie cutter & place onto a lined barking tray. Brush the top of your scones with your favourite plant based milk. Place into your oven at gas mark 5 on the middle shelf for 20 minutes or until golden brown.

You can serve your scones with whatever you like I decided to put vegan buttercream and strawberry jam but feel free to change it up however you like.

3-Ingredient Buttery Vegan Shortbread!

I'm going to show you one of my quickest biscuit recipes & that's vegan shortbread. When I went vegan, I can never find vegan shortbread. I thought it just didn't exist. I had no idea how to make it because I didn't even make it before I was vegan, but now I have this quick & simple shortbread recipe that I would like to share.

And a lot of places here in the UK have free from sections in the supermarket and I always forget that includes gluten free and different allergens so when I see shortbread I get really excited thinking yes vegan shortbread and then i look at the back….“oh no butter...” so I decided to try and make my own and well it was much easier than I thought shortbread was one of those recipes I was always told us really hard to make but when you actually look at it it's just flour butter and sugar and that's it and it's something that you can easily turn vegan because all you need to use is vegan butter Instead of dairy.

Also I have noticed that in the US not all sugar is vegan so if you're from the US you may need to make sure that you find a brand of sugar  that is vegan but here in the UK all sugar is vegan.

3-Ingredient Buttery Vegan Shortbread!
Ingredients
  • 2 Cups Plain Flour
  • 1 Cup Vegan Butter
  • 1/2 Cups Powdered Suger
  • 2 Tablespoons Granulated Suger (Topping)
Instructions
1. Add all your ingredients (except granulated sugar) Into a bowl.2. Mix your ingredients with a fork or your finger tips until you have a crumble texture.3. With your hands, press the crumbly mix until it forms a ball. (don't worry if it seems a bit dry, just keep pressing and it will form a ball.4. Flour your surface & roll out your dough.5. Cut out your shortbread with a cookie cutter or into any shape you like.6. Place your shortbread onto a lined baking sheet & add the granulated sugar on top.7. Place in the middle shelf of your oven for 15-20 minutes at gas mark 5 (375 degrees f, 190 degrees c) checking at regular intervals to make sure they haven't browned to much.8. When time is up, let them cool completely to firm fully.

Chorizo Sausage (Step By Step Seitan Recipe!)

So, for this post I will be making seitan! Before I went vegan, I had no idea what seitan even was. I would never have thought that you can make a meat replacement...with Gluten. I always thought it would end up having this “bread like” texture, or that it wouldn't be good, but, when you really get to know how to make it, it’ll be something so be so versatile within so many meals.
The greatest thing about seitan is that because it's just a plain wheat gluten, you can add any flavourings you like. You can make it a replacement for a variety of different kinds of meat. In this recipe, I'm going to show you one of the quickest & simplest ways to make seitan and i will be making a vegan chorizo what makes this seitan chorizo is the different spice that i will be adding.The thing with seitan is, that you can't make it gluten free so if you're intolerant to gluten, you won't be able to make this recipe. As far as I know, there is not a replacement for gluten in seitan because that is the main ingredient.

(If you're not a fan of spicy food, simply leave out the chili flakes, or if you like me & LOVE spicy food, add a tablespoon of your favourite hot sauce into the wet ingredients. I’m using Howl At The Moon, which is a vegan hot sauce made here in Liverpool & it's so good!)

Vegan Chorizo Sausage
Ingredients
  • 1 1/2 Cups Wheat Gluten
  • 1 Tablespoon Smoked Paprika
  • 1 Teaspoon Cayenne
  • 1 Teaspoon Chili Flakes
  • 1/4 Teaspoon Salt
  • 1/3 Cup Nutritional Yeast
  • 1 Cup Water
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Hot Sauce (optional)
Instructions
1. Add all your dry ingredients into a bowl (Wheat gluten, smoked paprika, cayenne, chili flakes & salt) & mix2. Add all your wet ingredients into a bowl & mix 3. Pour your wet ingredients into your dry & mix until the mixture begins to form into a ball.4. Once it's formed into a ball, flour a flat service & knead for a minuter or two to allow the gluten strands to form5.Once you've kneaded your dough, cut into 5 pieces & roll in to sausage shapes (you will notice the the seitan has a bit of a mind of its own but wrap the foil around it to help make the shape)6. Once they are all wrapped in foil, place them into your steamer & cook for 30 minutes.7. Let the sausages cool completely in the foil to help them keep their shape & give then a better texture.8. Then once fully cooled, remove them from the foil & fry in a pan to create a nice crisp outside & enjoy any way you like

Vegan Mac & Cheese (Quick & Simple Recipes)

Here is a recipe for vegan mac & cheese, made out of vegetables. I know “cheese” made out of vegetables; it might sound very weird but trust me, it's good. Even the UK is stepping up their vegan game with many pre-made vegan mac & cheese products now, but if you want a really quick, homemade alternative without having to buy vegan cheeses, I’ve got you covered.

Essential
  • 1 large potato
  • 2 carrots
  • ½ cup nutritional yeast
  • 1 cup soy milk
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • 1/4 teaspoon salt (or to taste)

A few people have asked me to convert the recipes into grams & millilitres, but I feel like having it in cups is a lot simpler, and here in the UK, there are so many places you can buy these little useful utensils from such as Home Bargain, as this is where I got mine from, and it makes cooking a lot easier than having to measure out each ingredient, so I suggest picking yourself up a set, because trust me, you'll realise how much easier it is to cook with them.

First peel & chop your potato & carrots, then place them into a pan of water. Boil until softened. Also get your pasta on to cook in a separate pan. Once the potatoes & carrots are soft, drain & add into your blender, along with your soy milk, nutritional yeast, paprika, turmeric & salt. Then, blend & that's it! Yes, really. That’s it. It’s a really fast & simple recipe, and tastes great!

Before I when vegan, I didn’t have a clue what nutritional yeast was, and when I first saw it, I thought it just looked like fish food. I had no clue that it would become such an essential part of my cooking. When I was first looking at recipes & meal ideas before I went vegan, so many of them said it can give your food a “cheesy” flavor, I just thought “How? How can this weird power do that?”... But it does! As you can see, the one that I am using it has added B12, so it's a great way to get that into your diet if you're worried about that! I got mine from Holland & Barrett here in the UK, while you can also get it in many health food stores.

You can add the sauce to anything you feel like, such as nachos, chips or even just as a dip.

Vegan Tofu Bacon! (Yes... Tofu Bacon). Quick & Simple Recipes

I know, tofu. Some people are either fans or dislike it because they’ve either had it not very well cooked, or just the look of it can put them off. The thing with tofu is, it’s like a sponge; it will absorb any flavour you put onto it, so seasoning is essential when it comes to cooking tofu. Here I'm going to show you a really simple tofu bacon recipe. I've called it tofu bacon because it's the closest thing I can think of that replicates its crispness & smoky flavour. It also works great on a vegan BLT sandwich.

I've seen a lot of tofu presses online, and when I first started cooking with tofu I thought I needed to press tofu each time that I was going to cook with it, yet with this recipe I just pressed around the tofu with a piece of kitchen paper to absorb any excess water, and because of the ways that you can cook the tofu by using this recipe such as baking or frying, a lot of the initial moisture is cooked off.


The frying pan option is great if you would want to cook this very quickly, but I think you can get the best results from baking them in the oven, along with giving the tofu a more crispy texture, while also making this recipe oil-free...if you're into that.





You can also add this tofu bacon onto the top of your favourite vegan mac & cheese Recipe for mine here or add into salads for something extra.

Vegan Tofu Bacon! (Quick & Simple Recipe)
Ingredients
  • One Block Firm Tofu
  • 3 Tablespoons Soy sauce or Tamari
  • 2 Tablespoons Maple Syrup
  • 1 Teaspoon Smoked Paprika Or Liquid Smoke
Instructions
1.First get your block of tofu an cut them into even rectangles, then lay them on a lined baking sheet.2. In a small bowl mix together all your wet ingredients (soy sauce, maple syrup & smoked paprika or liquid smoke) and whisk together until combined.3. Now grab either a pastry brush or a teaspoon & brush/pour the mix over each slice of tofu one coated, flip over & repeat4. Now you can either bake or fry your tofu. bake in the over at gas mark 5 for 30 minutes, flipping halfway through or fry in a pan for around 2-3 minuter on each side.

Fluffy Vegan Pancakes! (Quick & Easy Recipe)

Here is a really fast and simple recipe for vegan pancakes, without the need of any animal ingredients, along without any vegan egg replacement, which I don't really ever use in my baking, because I’ve never had the need for them while making any recipe. These pancakes are great if you feel like a sweet treat to whip up in a really small amount of time! The ingredients for this recipe are things you will likely already have in your home, so these are something you can easily make for a dessert or  breakfast. Let's get started!

Essential
  • 1 ½ cups of Plain Flour
  • 1 tablespoon of Baking Powder
  • 1 teaspoon of Bicarbonate Of soda
  • 2 tablespoons of Sugar
  • 1 cup of Soya Milk or any milk alternative you prefer
Optional ingredients
  • Raspberries
  • Maple Syrup/Agave Syrup
  • Icing Sugar


First of all, place all of your dry ingredients into a mixing bowl (Plan flour, sugar, baking powder, bicarbonate of soda), and give them a mix. At this point, you can also add different flavourings such as cinnamon, nutmeg and any fruit you would like to add into them. You can really make this recipe your own. This is such a simple pancake mix, so you can add all of the different flavourings that you want.

Once you’ve mixed the dry ingredients, add your soya milk/milk alternative you prefer, and mix that until you have a thick batter. Try to remove as many lumps as you possibly can, but if some remain, don’t worry. Get a frying pan on a medium heat & add some spray oil or coconut oil. I use a sunflower spray oil. Use a ladle to spoon out equal sized portions of the batter, but you can also make these pancakes any size that you like. By doing this, you'll end up having a different amount of pancakes, but that depends how big or small you would like to make them.


 
  

Once cooking, when bubbles start to form on the top of the pancakes, this is the time to flip them onto the other side, and continue to cook for a further minute.


Simply just double the recipe if you would like to make more with this mixture, as I made 5 large pancakes by using a regular sized ladle.There are many toppings that you can use. I used maple syrup, raspberries & powdered sugar sprinkled onto the top of the pancakes, but you can use any toppings you like.
