Quick, Simple, Unbelievably Vegan.

Easy Vegan Scones!


So, vegan scones. I loved scones before I went vegan, but obviously, there's butter, milk & everything else in them, so they definitely are not vegan, and again I have never ever seen any vegan scones in the shops, so I thought I'd try & make my own and I'm pretty proud of this recipe.


Ingredients

  • 2 ½ cups plain flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup vegan butter (cold)
  • ⅓ cup sugar
  • ½ cup soy milk

(Also I have noticed that in the US not all sugar is vegan so if you're from the US you may need to make sure that you find a brand of sugar that is vegan but here in the UK all sugar is vegan.)

Add all your dry ingredients into a bowl & mix until combined, then add your butter & mix with a fork or your finger tips until you have a crumbly mix. Then start adding your milk a little bit at a time, mixing each time until your mixture starts to form into a ball of dough. (If your dough is a little sticky, add more flour.)

When you are adding the milk into the crumbly mixture make sure that you don't completely rub in the butter in you want there to be patches of butter through out your dough so when its cooking it will have a crumbly and light texture. When your dough is all combined onto a ball you'll notice that its a very light & soft dough, and this is what you want to have perfect scones. If you notice that the dough is pretty sticky after you've added the milk, just add more flour onto your hands, surface you are going to roll it out on and your cookie cutter. With this dough, you don't want to add too much extra flour or the dough will become too stiff and it won't rise up in the oven and become more of a crust dough then a light dough.

Now that you have your dough rolled out to about one inch thick. Cut out your scones with a cookie cutter & place onto a lined barking tray. Brush the top of your scones with your favourite plant based milk. Place into your oven at gas mark 5 on the middle shelf for 20 minutes or until golden brown.

You can serve your scones with whatever you like I decided to put vegan buttercream and strawberry jam but feel free to change it up however you like.
